Most Nigerians would describe yamarita as fried yam that got a master's degree from Harvard University and went to Yale for a doctorate degree.

- Get Yam
- Prepare Flour
- Take Oil
- Make ready Maggi
- Prepare Curry

The difference between Yamarita and the common fried yams (dundun) is the egg and flour mix. Yamarita is a tasty Nigerian delicacy prepared by deeply frying egg-coated yams. Unlike the regular fried yam, yamarita is a fried yam coated with egg-flour which makes it crunchy and sweeter. It has a nice you just can't resist!
Steps to make Yamarita:
- 1/2 tuber of medium yam chopped into pieces, wash the yam place in a pot add 1 cube of maggi or a pinch of salt and boil till it's tender.drain the water and allow to cool.
- Mix the flour with the crushed scotch bonnet, tattase and garlic add some seasoni(maggi)
- Beat the eggs in a separate bowl, add seasoning to your desired taste and set aside.
- Roll each yam into the flour mixture, coat the yam generously with the flour, then dip each coated yam into the egg mixture, make sure the egg mixture covers the yam
- Heat up some oil in a frying pan, set it on medium heat, when the oil heats up, dip each flour and egg coated yam into the oil fry and flip on all sides till golden brown

Yamarita Yamarita, also known as "Dundun Oniyeri" was one of my best meals from TFC (Tastee Fried Chicken) back then in Nigeria. Made from flour coated boiled Yam, this meal was an absolute delight! Came across the recipe a while back and regretted not being in the know earlier as this would have saved me money spent binging on it back then.
