The difference between Yamarita and the common fried yams (dundun) is the egg and flour mix. Yamarita is a tasty Nigerian delicacy prepared by deeply frying egg-coated yams. Steps to make Yamrita:
  1. Cut yam into round then peel it cut into medium sizes then wash the yam
  2. Add them to a pot pour in water then add some salt cook the yam to tender drain and allow it to cool completely
  3. Add flour and corn flour and dried celery and turmeric mix together mix well
  4. Then crack eggs in a bowl add the seasoning cubes and curry whiskwell then dip yam in eggs then coat with flour mixture heat oil in a pan then fry
  5. Till golden brown and crispy enjoy

Yamarita,also known as Dun Dun Oniyeri, is simply thinly sliced Par-boiled/blanched yams dipped into whisked egg+flour& fried until crispy. Method - Yamarita Cut the yam in rectangular shapes, wash and boil with salt and water.
