- Add 2 cups chicken stock and 2 cups half and half and bring to a simmer for 20 minutes. Do not boil.
- Add shredded pepper jack cheese a little at a time and stir while it melts. Once cheese is melted add broccoli. Stir for 10 minutes then serve.

In blender or food processor, process soup, in batches if necessary, until puréed. In a large saucepan, melt the butter and cook the onion until it becomes translucent.
