- Chop the vegetables for the mirepoix into small cubes.

- The cooking of the mirepoix should be done whilst cooking the sausages, which should be first, pricked all over with a fork. Broil / Grill the sausages until they are browning on all sides and cooked through. Add the sausages to the onion and stock mixture. Continue to simmer for at least 10 minutes.
