Instructions to make Mkate wa sinia/mkate wa kumimina/ Rice bread:
- Wash then soak the rice overnight or at the very least for 6 hours
- Mix the rice, coconut, cardamom, oil, eggs, sugar and milk powder in a blender.
- Blend to a complete smooth paste without rice pebbles or lumps
- Pour in a bowl and mix in the yeast. Cover the mixture with cling film and let rest for between 1 hour and 1½hours.
- The paste forms bubbles which you then mix using a lardle
- Rub oil/far onto the tin/pan to be used for cooking and pour in the mixture
- Preheat the oven to 350°c. Once you pop in the mixture, reduce the heat to 200°c and set the heat source to bottom. Cook for 25 minutes. Reduce temperature to 180°c and heat source to top. Cook for 20 minutes or until browned
- Remove from oven and cover with a lid as it cools
- Serve as desired
