- Heat your oil on the pot and add your onions, stir till golden brown
- Add your salt, potatoes and matoke and stir,after few minutes add enough water to make them well cooked,cover the pot
- In a different pot/bowl mash your already cooked Njahi using a glass bottle, (I use wine bottle)
- When ready add them to the potatoes and matoke, cover the pot until water is almost dry,turn of the heat and start mashing until smooth
- Serve with stew of you choice

Mukimo is tasteless, you will need salt and spiced soup for you to make head or tail of what eating. It is simply mashed potatoes mixed with githeri and a food colour made from some weeds.
